  • 1 cup stone-ground grits (not instant)
  • 4 cups water (or 2 cups water + 2 cups whole milk)
  • 1 tsp kosher salt
  • 2 tbsp unsalted butter
  • 1/2 cup shredded sharp cheddar cheese (optional)

 

Ingredients 
Creole Shrimp

  • 1 lb Gulf shrimp (peeled and deveined)
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1/2 yellow onion, diced
  • 1/2 green bell pepper, diced
  • 1/2 celery stalk, diced
  • 2 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (adjust to taste)
  • 1/2 tsp dried thyme
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/2 cup diced tomatoes
  • 1 tsp Worcestershire sauce
  • Dash of hot sauce
  • Juice of half a lemon
  • 2 tbsp chopped parsley or green onions, for garnish

Instructions

  1. Cook the Grits: Bring water to a boil, whisk in grits, reduce to low, simmer 20–25 mins, stir in butter and cheese.
  2. Prepare the Creole Shrimp: Heat butter/oil, sauté vegetables, add garlic and seasonings, stir in tomatoes and shrimp. Cook until pink.
  3. Assemble: Spoon grits into bowls, top with shrimp and sauce, garnish with herbs.

Ingredients – Bread Pudding

  • 1 loaf day-old French bread, cubed
  • 2 cups whole milk
  • 1 cup heavy cream
  • 4 large eggs
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup raisins or pecans (optional)
  • 2 tbsp butter (for greasing the dish)

 

 

Ingredients – Bourbon Sauce

  • 1/2 cup unsalted butter
  • 1 cup powdered sugar
  • 1/4 cup heavy cream
  • 2 tbsp bourbon (or vanilla for non-alcoholic)

Instructions

  1. Make the Bread Pudding: Preheat oven to 350°F, grease dish, mix wet ingredients, soak bread cubes, pour into dish, bake 45–50 mins.
  2. Make the Bourbon Sauce: Melt butter, whisk in sugar and cream, remove from heat, stir in bourbon or vanilla.
  3. Serve: Cool slightly, drizzle with sauce, optionally top with whipped cream or ice cream.
