A Classic Houston-Style Brunch Favorite

Ingredients

For the Grits

1 cup stone-ground grits
4 cups water or chicken broth
1 cup shredded sharp cheddar cheese
2 tablespoons butter
Salt and black pepper to taste

For the Shrimp

1 pound large shrimp, peeled and deveined
4 slices bacon, chopped
2 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon paprika
½ teaspoon cayenne pepper (optional)
2 tablespoons chopped green onions
Salt and pepper to taste

 

Instructions

  1. Cook the Grits
    Bring the water or chicken broth to a boil in a saucepan. Slowly whisk in the grits and reduce heat to low. Cook for about 15–20 minutes, stirring occasionally, until thick and creamy.

  2. Add Flavor to the Grits
    Stir in butter and shredded cheddar cheese. Season with salt and pepper and keep warm.

  3. Cook the Bacon
    In a large skillet, cook the chopped bacon until crispy. Remove the bacon pieces and set aside, leaving the bacon drippings in the pan.

  4. Cook the Shrimp
    Add shrimp to the skillet with the bacon drippings. Stir in garlic, paprika, cayenne pepper, and lemon juice. Cook for about 3–4 minutes until the shrimp turn pink and are cooked through.

  5. Combine and Serve
    Spoon the creamy grits into bowls, top with shrimp, sprinkle with crispy bacon and green onions, and serve immediately.
